Itinerary
Day One
Benvenuti! This morning, Jeff Michaud and Joe Sasto will welcome you at Bari International Airport, and together we’ll head to Bari Vecchia—the historic heart of the city, where seaside charm and centuries of tradition come together.
We’ll wander through its maze of narrow streets, passing through ancient fortified walls and landmarks like the Basilica of Saint Nicholas and Bari Cathedral. Along the way, we’ll encounter the famous orecchiette ladies shaping pasta by hand—a moment Joe has been especially looking forward to experiencing firsthand. We’ll also stop to enjoy a taste of iconic focaccia Barese—a highlight for Joe, whose love for focaccia (did you see his “Will It Focaccia?” series) makes this a must.
From there, we’ll sit down to a seafood lunch featuring the freshest local catch.
Later, we’ll arrive at our Masseria, where you’ll settle into your rooms and enjoy a relaxed afternoon. As you explore the gardens and stone pathways, the surrounding nature welcomes you with its colors, sounds, and the unmistakable scent of Mediterranean vegetation.
This evening, we’ll head to the charming village of Ceglie Messapica for a magical dinner at a Michelin Guide restaurant.
Day Two
After a delicious breakfast prepared by our casalinghe (the ladies of the house), we’ll set off for Altamura for a one-of-a-kind gastronomic experience with our friends Vito and Paolo.
We’ll begin at their dairy, where you’ll take part in the cheesemaking process, before following Vito through the town’s narrow streets to discover its most talented artisans. Known as Italy’s granary, Altamura is famous for its exceptional wheat—we’ll taste its iconic crusty bread baked in ancient ovens, soft focaccia drizzled with olive oil (Joe will definitely have thoughts here), and traditional pastries.
Lunch will be served in a unique natural setting, where Vito will present a selection of his most interesting cheeses paired with wines from small, family-run producers.
Back at the Masseria, enjoy time to relax by the pool or wander the surrounding grounds. In the evening, we’ll gather for a farm-to-table dinner prepared by our chef, followed by a lively Pizzica performance under the stars.
Day Three
Today, we explore Puglia’s stunning coastline, where each town and harbor forms part of a vibrant Mediterranean mosaic.
From the seaside promenade of Monopoli—where daily life still unfolds at a relaxed southern pace—we’ll continue to the dramatic cliffs of Polignano a Mare. Here, we’ll sit down for lunch at Ristorante Da Tuccino, a beloved local institution known for its pristine seafood and no-frills approach that lets the quality of the ingredients shine. Expect simply prepared Mediterranean fish, raw seafood specialties, and sweeping views of the Adriatic.
After some downtime at the Masseria, we’ll visit the magical white city of Ostuni, perched above endless olive groves overlooking the sea. We’ll wind through its narrow streets by tuk-tuk (drivers included), taking in the charm of this luminous hilltop town.
After dinner in town, we’ll continue to Riccardo Caffè for drinks—an inviting, stylish spot where locals gather for expertly crafted cocktails and a relaxed, convivial atmosphere under the stars.
Day Four
This morning, enjoy the peaceful surroundings of the Masseria—whether strolling through the vineyards, biking the estate paths, or relaxing poolside.
Later, our chefs will gather fresh vegetables and herbs from the garden and will lead a hands-on cooking class. Learn to prepare pizza and panzerotti from scratch, along with a traditional garden scapece, before enjoying a convivial lunch under the pergola.
In the afternoon, we’ll head to Alberobello to visit the Intini family olive mill. Their extra-virgin olive oil is recognized by the Slow Food Presidium, and we’ll learn how to taste and identify the highest-quality oils.
Following a leisurely stroll, we’ll gather for dinner in a courtyard surrounded by these unique structures. Chef Matarrese, a native of the region, celebrates local ingredients in his menu—featuring Alberobello’s cacioricotta, salicornia, and a curated selection of Apulian olive oils.
Day Five
Enjoy a slow morning under the Puglian sun before we head out to meet Mariangela at her family’s organic farm. Here, Bruna Alpina cows are raised exclusively for the exceptional quality of their milk—rich in protein and ideal for producing cheeses with remarkable elasticity and depth of flavor, from burrata and mozzarella to caciocavallo, caciotta, and scamorza.
During an engaging, hands-on workshop, Mariangela will guide us through traditional dairy-making techniques. Chefs Jeff and Joe will be right there with you—tasting, asking questions, and sharing their own perspectives as we dive into these time-honored methods. We’ll then gather at her table for a simple yet delicious lunch featuring ingredients grown right on the farm.
Back at the Masseria, we’ll unwind with refreshing aperitifs crafted by our bartender, highlighting the scents and aromas of Puglia as we take in the sunset.
Dinner tonight is all about meat. In a traditional butcher shop tucked into a narrow alley in Martina Franca, we’ll sample an array of regional specialties—straccetti, gnummarieddi, zampina, and more—slowly roasted in wood-fired ovens known as fornelli, using a technique influenced by Arab traditions that imparts deep, smoky flavors.
Day Six
This morning, we leave our oasis to explore Puglia's artistic side. Shaped by centuries of influence—from the Greeks and Romans to the Byzantines, Normans, and Spanish—the region reveals its layered history through architecture, culture, and cuisine.
We arrive in Lecce, often called the “Florence of the South,” known for its ornate Baroque architecture and elegant atmosphere. We’ll begin with a refreshing caffè leccese—an iced espresso with almond syrup—before setting off on a guided walk through the city. Along the way, we’ll sample street food, sip local wines, and indulge in a classic pasticciotto.
Back at the Masseria, we prepare for a special culinary experience led by Jeff Michaud and Joe Sasto. Together, they’ll guide you through the preparation of traditional dishes like orecchiette con cime di rapa, sagne ncannulate with pesto di mùgnuli, cavatelli alla tarantina, and taiedda—sharing techniques, insights, and their own perspectives along the way.
This hands-on experience offers an authentic introduction to Puglia’s culinary culture. Dinner will be paired by our sommelier, who will guide us through the region’s native wines, including Nero di Troia, Primitivo, Negroamaro, and Greco Bianco.
Day Seven
After breakfast, we head to Martina Franca, a 14th-century town in the heart of the Itria Valley, to uncover the traditions behind its famed Capocollo.
Made from Apulian Black Pigs raised in the wild—now protected as a Slow Food Presidio—this specialty is crafted by the skilled norcini of the Caroli family. We’ll observe the process firsthand, from marination in wine and spices to the gentle smoking that defines its flavor.
The Caroli family also produces exceptional extra virgin olive oil, known for its balance and delicate grassy notes. After touring their olive mill, we’ll sit down to a feast of cured and grilled meats, seasonal vegetables, and fragrant local bread, paired with wines from the Paniere di Puglia.
The afternoon is yours to relax back at the Masseria—pack, unwind, and take in one final sunset before our farewell dinner: a celebratory meal at one of Italy’s top 50 osterias in Putignano. We’ll gather one last time around the table with Jeff, Joe, and new friends, celebrating the flavors and spirit of Puglia.
Day Eight
After one last breakfast together, we say arrivederci to Puglia… until next time.

What does the price include?
Seven nights luxury accommodation in double occupancy at the Masseria; private van with driver for all trips and excursions in itinerary; group transfers from and to the Bari Airport BRI (see arrival/departure details); private tours with local guides and cultural experts; exclusive VIP access and tastings; guided activities; entrance fees; daily breakfasts, lunches and dinners with beverages; gratuities.
What does the price not include?
International round-trip airfare; travel insurance; private transportation; activities not included in the trip itinerary; hotel incidentals, including laundry service; personal expenses; and private transfers.
What are the arrival & departure details?
The trip starting and ending point is the Bari Airport (BRI). We recommend that you arrive on or before Saturday, May 15th, 2027. On Sunday, May 16th, 2027 we’ll meet as a group at 9am at the Airport. An additional meeting point is set downtown Bari, at Castello Svevo at 9:45am. The last day of our culinary trip is Sunday, May 23rd, 2027 when we will reach the Bari Airport around 8,30am.
Who is going on this trip?
We limit the group to no more than 16 travelers, hosted by Jeff Michaud and Chef Joe Sasto. Our culinary journeys focus on food, culture, and local traditions, bringing together a diverse group of like-minded guests—solo travelers, couples, and friends traveling together. This experience is recommended for travelers 18 years and older who do not have mobility issues, given the uneven ground and steps typical of this destination's architecture.
Who is leading this trip?
This trip is led by our founder, Chef Jeff Michaud, who has traveled extensively through the region, forged wonderful friendships, and thoughtfully crafted your itinerary for the week. Our special guest is chef and author Joe Sasto. Throughout the journey, we’ll also be joined by local expert guides who are deeply knowledgeable about the region’s culture, customs, and history, and are passionate about sharing it with us.
What is the cancellation policy?
You may cancel on or before December 17th, 2026 and receive a full refund minus the $1,500 per person non-refundable initial deposit. If you cancel on or after December 18th, 2026, a 50% cancellation fee will apply. Cancellations made on or after February 15th, 2027 are non-refundable (100% cancellation fee). We highly recommend purchasing travel insurance, as we are not able to make exceptions to this policy for family or medical emergencies or trip cancellations. What Travel documents are needed?
U.S. citizens are required to show a valid US passport. It is recommended that your passport is valid for six months after your travels are over. Starting soon, U.S. travelers will also be required to obtain an ETIAS (European Travel Information and Authorization System) travel authorization before entering most European countries, including Italy. This is a simple online application linked to your passport and should be completed before departure. More information can be found here: ETIAS.
Can this itinerary be booked for a private group?

Do I need to pay a solo traveler supplement?
Unfortunately, we are unable to offer single-room occupancy on this trip. If you are interested in sharing a room with another solo traveler, please contact us and we will do our best to assist with arrangements.
