Both of Sicilian origin, Sal is a master of hospitality, shaped by his upbringing in a warm Sicilian household, while Gary—founder of Authentic Explorations—designs custom journeys that use cuisine as a lens into culture.

Day One
Benvenuti in Sicilia! Upon arrival at the Palermo Airport, check-in at Planeta Country House in Menfi. Immersed in the uncontaminated nature of South Western Sicily, this is a place where you can rediscover the sense of home and a warm family welcome. The Country House new look reflects the intimate connection between the winery and nature, telling the story of a modern Sicily committed to sustainability.
Enjoy a welcome drink, settle in your room, and unwind at the pool.
Tonight, we head to Donnafugata Contessa Estate for an extraordinary countryside wine tasting and dinner.
What makes this experience different from other winery experiences? Here, you will find yourself in the home of the Donnafugata's winemakers: the Rallo family. This is no factory or workplace: you will find yourself in the historic villa of one of the most important families in Sicilian wine and food! We enjoy an extraordinary meal in an absolutely warm, welcoming atmosphere, where we can enjoy a moment of total immersion in the flavors of wine, extra-virgin oil, and Sicilian heritage.
Day two
Today we explore Sicily as a captivating land of contrasts. After a delicious breakfast under the pergola, we embark on a journey that blends the best of Sicilian wine culture with the unique heritage of Piana degli Albanesi, the heart of Sicily's Albanian-speaking community.
We start at the Sallier de La Tour Winery where is today narrated through three different expressions of Syrah; following a project to enhance the territory. Here lives Costanza, from the noble Tasca d'Almerita family, immersed in a highly authentic rural environment, who will welcome us in her small Sicilian kitchen for a delicious lunch and refined wine tasting!
In the afternoon, we delve deeper into cultural discovery at Piana degli Albanesi, a place where Greek Byzantine traditions flourish. Experience the artistry of Sicilian artisan jewelry and visit a local bakery rich in time-honored bread-making rituals. Uncover the secrets behind Sicily’s iconic cannoli, made with authentic recipes from this historic community. You’ll have the chance to determine if these are the best cannoli you’ve ever tasted. We believe they are!
After some lounging time back at our Country House we gather in the evening for a casual dinner in our kitchen where, with chef Michaud, you learn how to make sfincione, the original Sicilian pizza topped with local ingredients that reflect the region's essence.
Day Three
After our homemade Sicilian breakfast, the Planeta Family opens the doors of La Foresteria’s kitchen. Thanks to your active
participation, chefs Angelo Pumilia and Jeff Michaud have designed a menu that represents the profound connection to the Planeta Family’s to Sicily's gastronomy. During the lesson, we will learn the history of the dishes and their numerous influences while we sip a fine glass of wine. The open kitchen recalls the atmosphere and warmth of a Sicilian dwelling, with a breathtaking view of the herb gardens, the green vines, and the sea's blue. Enjoy your sumptuous lunch in a traditional Sicilian setting!
After lunch we unwind at the Country House and, later in the afternoon, we head to Marsala for a truly unique deep dive in Sicily's heritage of salt harvesting.
We visit to the Ettore Infersa Salt Pans, explore the historic Dutch windmill, and at sunset, we find ourself on the Mill's terrace to sample hand-harvested salts, each with its distinct flavor and personality, perfectly paired with an array of fresh, local delicacies. From crusty bread and velvety olive oil to sun-ripened tomatoes, creamy cheeses, and even dessert, every bite celebrates the magic of this unique ingredient. And, of course, no Sicilian experience would be complete without wine—raise a glass and toast to the flavors of Marsala!
Day Four
This morning we learn more about the Sicilian palate symphony by exploring Palermo. The city's culinary heritage is a rich tapestry shaped by Arab, Norman, Spanish, and Italian influences—a flavorful reflection of the city’s layered history. We start with a guided market tour in Palermo alongside a local chef, sampling street food like panelle, arancini, and caponata while learning about their rich cultural roots.
Lunch today is at a renowned restaurant located inside the world-famous Teatro Massimo opera house, where a special menu awaits. The meal will highlight the street food specialties we’ve just encountered, bringing them to the table in a more refined setting. Before leaving Palermo, we visit the Monastery of Santa Caterina to taste traditional cassata made from recipes passed down by the nuns with a delicate blend of Arab and Sicilian flavors that have stood the test of time.
We arranged a special dinner at the Dispensa Estate. Nestled in the heart of the Menfi hills and surrounded by 160 hectares of vineyards, the Dispensa Estate is where the Planeta winemaking takes place. Inside one of the cellars is the Infernotto, a private wine vault where the family preserves their most treasured labels from around the world. The Library, dedicated to the history of vines and wine, contains hundreds of Italian and international volumes dating from the 1700s to the present. In this magical place, we will experience the essence of Sicilian hospitality while savoring the finest local flavors and wines in an unforgettable setting.
Day Five
Today, we leave the island's Western side to reach our home near Mt. Etna. We embark on a journey through Sicily's heart as we wander among the majestic ancient ruins of Agrigento's Valley of the Temples, a UNESCO World Heritage Site that whispers the timeless stories of Greek civilization. Then, step into Diodoro's Secret Garden—a hidden paradise tucked within the valley dating back to the 1700s. Citrus groves and breathtaking temple views surround this secret sanctuary. We'll savor an exquisite meal crafted from organic, family-inspired recipes in a magical setting. This is more than a meal and a view. It is an exclusive offering from Authentic Explorations, so rare and precious that it will leave an indelible mark on your memory!
Late in the afternoon, we reach our new Sicilian home, Dimora Cottanera. Launched in August 2023, is a hospitality project by the Cambria Family, inspired by memories of summer holidays in their vineyard. Here we experience the beauty of the surroundings, understated elegance, and contemporary hospitality.
After settling in, we gather for a simple but welcoming dinner prepared by Jeff and the in-house chef in the tasting room of the Cottanera Winery.
Day Six
Today, we embark on an unforgettable journey that harmonizes mind and body amidst the raw power and beauty of one of nature’s most intense environments.
Aboard a Jeep and guided by a knowledgeable nature expert, we set out to uncover the wild beauty of Mount Etna—the highest active volcano on the Eurasian plate and a UNESCO World Heritage Site.
We experience authentic life at the foot of Mount Etna with a visit to a local shepherd. We connect with nature, meet the animals, and savor fresh, local cuisine—a true expression of Sicily’s rich rural cheesemaking tradition.
When we return to Dimora Cottanera, we can enjoy the wellness area, with its ancient barrels and a small sauna or lounge at the infinity pool that provides a refreshing escape from the heat of the day.
Our journey today concludes with a memorable evening at the Tasca d’Almerita vineyards, where the majestic presence of Mount Etna serves as a powerful reminder of the volcanic energy that shapes these fertile soils. Here, bold, expressive wines are born. We’ll enjoy a special dinner at Tenuta Tascante, the Tasca d’Almerita family’s estate, featuring a tasting of signature wines like Buonora and Ghiaia Nera, perfectly paired with local delicacies.
Day Seven
After our freshly made Italian breakfast, we head out to Siracusa, located in the southeastern corner of Sicily on the Ionian coast. Here, history, mythology, and beauty converge in the charming island of Ortigia.
We begin by exploring the historic market. Vendors shouting the daily specials, scales heavy with the day’s catch, and tables overflow with juicy citrus fruits, aromatic herbs, nuts, and wheels of cheese. The sights and sounds of Ortigia’s daily market shouldn’t be missed.
Our lunch is a relaxed, genuine taste of fresh, coastal ingredients paired with local wine.
In the afternoon, we tour Ortigia with a private guide, visiting highlights like the Fountain of Arethusa, a mystical freshwater spring that flows into the sea, ancient Greek temples, Baroque churches. As we immerse in then town's vibrant life, we shop brilliant shops for handmade crafts and soak in the coastal charm.
Back at the Dimora, our farewell dinner awaits—a heartfelt celebration featuring recipes from the Cottanera family cookbook, paired with estate wines. It's not just a meal, but a final toast to Sicily’s rich traditions, stories, and unforgettable flavors.
Day Eight
As our Sicilian journey draws to a close, we bid you farewell—but not goodbye. Sicily, with its timeless beauty, rich flavors, and heartfelt hospitality, leaves a lasting imprint on the soul. Enjoy a final breakfast before your departure, carrying with you the memories, tastes, and spirit of this extraordinary island. Arrivederci, Sicilia—until we meet again!

What does the price include?
Seven nights luxury accommodation in double occupancy. 4 nights at Country House La Segreta 3 nights at Dimora Cottanera. Private van with driver for all trips and excursions in itinerary (except airport transfers); private tours with local guides and cultural experts; exclusive VIP access and tastings; guided activities; entrance fees; daily breakfasts, lunches and dinners with wine; gratuities.
What does the price not include?
International roundtrip airfare, travel insurance, airport transfers, activities not specified in the itinerary, hotel incidentals (including laundry service), personal expenses, and private transfers.
What are the arrival & departure details?
The trip will begin at Country House La Segreta in Menfi and conclude at Dimora Cottanera in Castiglione di Sicilia. We recommend booking your flight to arrive at Palermo Airport (PMO) and your return flight from Catania Airport (CTA). On Sunday, May 18, we will gather as a group at 5 p.m. for a welcome drink at Country House La Segreta. The final day of our culinary trip will be Sunday, May 25, when we check out from Dimora Cottanera. Private or semi-private transportation to and from the airports can be arranged for an additional fee.
Who is going on this trip?
We limit the group to no more than 16 travelers, your hosts chef Jeff Michaud, Sal Rizzo, and Gary Portuesi. In this culinary trip, you can expect to be joined by a group of like-minded people, who share your passion for Italian food and traditions - including solo travelers, couples and friends traveling together.

This trip is led by our founder, Chef Jeff Michaud and Sicilian insiders, Gary Portuesi and Sal Rizzo. Together they crafted your itinerary for the week. We’ll be joined throughout our adventure by local chefs, artisans, and expert guides who are deeply knowledgeable with respect to local cultures, customs and history and are passionate about sharing that with us.
What is the cancellation policy?
You may cancel on or before December 19, 2025 and receive a full refund minus a $1500 per person service fee. If you cancel on or after December 20, 2025 there is a 50% cancellation fee. On or after February 17, 2026, there is a 100% cancellation fee. We highly recommend purchasing travel insurance as we are not able to make exceptions to this policy in cases of family/medical emergency or cases of the trip being canceled (See our Terms and Conditions for full details).
What Travel documents are needed?
U.S. citizens are not required to have a visa for tourist visits to Italy but are required to show a valid US passport. It is recommended that your passport is valid for six months after your travels are over.
Can this itinerary be booked for a private group?
Yes! We can customize this trip itinerary at a time that is most convenient for you and your friends. The minimum number of participants for a private trip is 10. For more information contact us at travel@laviagaia.com.
Do I need to pay a solo traveler supplement?
Yes, there is a $1,400 supplement for solo travelers, to be paid at the time of booking to secure a private room. Single spots are very limited and available on a first-come, first-served basis. (See our Terms and Conditions for full details).
